Adam's Stuffing Bread

Ingredients

  • 2 packages of Keiser Rolls
  • 3 tablespoons butter
  • 1 large onion, VERY finely chopped
  • 2 stalks celery, VERYfinely chopped
  • 2 eggs, lightly beaten
  • 2 additional egg yolks lightly beaten (this is to hold the bread together)
  • 2 cups chicken broth
  • 2 teaspoons rubbed sage
  • 1 teaspoon garlic powder
  • salt and pepper to taste

Directions

1.         Coat a large cookie sheet with cooking spray or butter (I used butter)

2.         Break apart both bags of Keiser Rolls into small pieces in a huge bowl

3.         Preheat oven to 325 degrees F (165 degrees C). Lightly grease a 9x13 inch baking dish.

4.         Melt the butter in a medium saucepan over medium heat. Stir in the onion and celery and slowly cook until soft. Remove from heat and drain.

5.         Mix the eggs and chicken broth into the bread crumbs. The mixture should be moist, but not too mushy. Use water, if necessary, to attain desired consistency. Mix in the onion, celery, rubbed sage, garlic powder, salt and pepper well.

6.         Press the mixture into a large cookie sheet making sure that it is evenly distributed (about ½ inch thick).

7.         Heat in the oven until a toothpick can be inserted and removed without any residue.

8.     Let cool to set and cut into pieces of the desired size.


Ewan's 2011 Steak Sandwich


Marinade the steak (1lb flank steak) for 2-24hrs in wax paper using olive oil, rosemary, garlic, chili peppers, thyme and sage. Grill the steak on high heat until cooked rare-med rare. Let rest for 15minutes before slicing thinly against the grain. 


fennel red onion marmalade 

Two red onions sliced thin, caramelize in a saucepan, add 1 cup of red wine vinegar, 1/2 cup of sherry vinegar, tsp of mustard seed, tsp of fennel seed, 1/4 cup of honey and salt/pepper to taste. reduce until all liquid is gone and set aside. (marmalade is good in fridge for a month or so).

You can use any bread, I think a rustic country bread is good. Slice and brush with olive oil, grill. 
Add the marmalade to the bread, top with arugula or frissee lettuce, add olive oil and salt/pepper to lettuce (lightly) steak  on top of that and a small amount of blue cheese if desired. voila!
